Science of why Wine and Cheese taste yummy

Wine goes with cheese. Meat sandwiches go with a pickle. Green tea goes with Asian food. Sushi goes with pickled ginger. Oil goes with vinegar. Soda goes with chips. Many of the world’s most beloved food combinations pair an astringent food, which causes the mouth to pucker up, with a fatty food, which makes the mouth feel slippery.

Wine consumption as an Economic indicator

Bloomberg reported on another indicator of China slowing down – its consumption of the world’s best wines…

Asian buyers have become unwilling to pay ever-higher auction records for First Growths such as Lafite, and they also balked at Bordeaux’s ambitiously priced 2010 “en primeur” campaign. The benchmark Liv-ex 100 Fine Wine Index is down 11.4 percent this year.

“It feels a lot more than that,” Simon Staples, the Hong Kong-based head of sales and marketing at London wine broker Berry Bros & Rudd said in an interview. “Prices for some First Growths such as Lafite ‘08 have dropped off by more than 40 percent and haven’t reached the bottom yet. Our clients are looking instead at Bordeaux Second Growths and the top 10 names in Burgundy.”

Last October, a case of 1982 Lafite-Rothschild sold at auction in Hong Kong for a record $132,700. This year, a case of the same wine sold for $36,100.

I have had Chablis once in NY and had liked it. Then I wasn’t particularly keen on whites or red or vintage or region as I was just starting. But since realization, I have always wanted to taste Chablis. Infact my trainer, a lady from England, is a huge fan of the Chablis and has it regularly for brunches and afternoons.

Drouhin Chablis 2007 from Burgundy, France is pale straw in color with a tinge of green.

Nero D’Avola is an Italian grape varietal and Reveilo is the first Indian vineyard to import those grapes and make the wine locally with their Italian winemaker.

Reveilo’s Nero D’Avola 2010 is a light purple colored wine. First nose had a strong fruity aroma of cherries. The second nose also has hints of cinnamon and smoke. Quintessentially Italian.

In one of my business travels, I picked up this wine from a well-stocked wine shop in a mall. The show was right next to Star Bucks and my dilema was short-lived when I saw this wine and the price tag attached to it.

Le Grand Pinot Noir 2010 from Limoux, France is a rich red and available for only Rs. 800 inclusive of taxes. But then, it was outside India and the duties they charge here in Maharashtra are insane.

My Wine Cellar is an experiential blog of vineyard visits and tastings at home and restaurants with friends and family.

Tasting is different from consumption and both aren't necessarily done at the same day and time.

I enjoy product photography and have tried to make the wines appealing by using a perceptive element around the product. These are not provided by anyone, including the vineyards.
